Meat Co Posh Ribs (serves six)

1. In a large pot, add all ingredients to the water, except the bbq sauce.  Leave the ribs as one large piece with several bones.

2. Bring this to the boil and simmer for three hours on a gentle heat. After three hours the meat should be tender.

3. Remove the ribs from the pot; using tongs you should now be able to pull the rib bone easily out of the centre of the meat. Do this so that all the bones are removed. Keep the meat as one piece on a tray in the fridge overnight.

4. Once chilled, the meat will be hard and it should be easy to trim the excess fat and sinew off it.

5. You should have about 1.2kg of trimmed, de-boned meat left. This can now be sliced into about 0.5cm pieces, widthwise (opposite to the way the bones were running).

6. Warm the bbq sauce and dip the slices of beef into the sauce (baste) then reheat the meat either on a bbq plate, in a fry pan or on a flat grill.
 
The beef and ribs can be served with any grilled or steamed vegetables and mashed potatoes.

YOU'LL NEED (Prepare a day ahead)

  • - 1 set of beef short ribs (approx 5kg), do not separate
  • - 6 litres water (enough to cover ribs in a pot)
  • - 6 pieces bay leaves
  • - 10g fresh thyme
  • - 20g fresh rosemary
  • - 5g crushed black peppercorns
  • - 15g crushed juniper berries
  • - 10g paprika
  • - 25g salt
  • - 500ml smoky bbq sauce to baste the ribs (at end of recipe)
